What’s For Breakfast?

My breakfast, especially on the days when I go to work, usually is toasted whole wheat English muffin topped with natural peanut butter.

With a cup of coffee on the side.

And sometimes, if I feel like it, I’ll slice up 1/2 a banana and throw it on there.

Kinda boring, I know…but I wake up @ 430am on the days I have to work and cooking isn’t something I want to be doing that early in the morning, you know?

On days when I don’t have to work, I’ll actually take the time to cook somethin’ up in the kitchen.

Like the other day,

I made this…


I’m no gourmet chef…but it tastes better than it looks.

I promise.

What is it?

Well, it’s scrambled eggs stuffed inside a whole wheat pita pocket.

What’s in it?

2 eggs
chopped spinach
1 slice turkey bacon
sprinkled with mozzarella cheese (a little)

 I don’t really measure the ingredients, but it’s pretty simple to make.
You can add more veggies if you want.
But I was running low on fresh veggies, so I just stuck to spinach. LOVE spinach.

I even sprinkled some Tapatio on it.

Yummy.

So there you have it.

My Saturday Workout

Yesterday, I took the day off from working out because of a family emergency.

Everything’s okay for the time being…

So today…

Went for a walk with the hubs, the dogs, and my 2 yr old niece London.

Walked 1/2 a mile to the park…played on the jungle gym with the baby…ran around with the dogs for awhile…then walked back home.

Was that all I did?

Of course not.

Went to the gym after we got home. This time, I did some weight lifting with the boys. First time in almost 2 weeks.

Here’s what I did today:

Warm-up: walked on the treadmill for 5 minutes.

Cardio: ran 1 mile @ a 6.5-7.0 speed

Weight lifting: Focused on upper body

10 reps lateral raises w/10lb weights
10 reps rear delt flys w/10lb weights
10 reps bicep curls w/10lb weights
10 reps on this machine (25lb weights on each side)

ISO Lateral High Row Machine

10 reps on this machine (clip on 65lbs.):

Seated Chest Press Machine

**Did each exercise 4x thru**


I ended my workout with doing 3 1-minute planks.

I haven’t done my Plank-A-Day in almost 2 weeks.

Because of being sick.

And for trying to get my body back into the groove of working out again.

So 3 1-minute planks it is. Starting it off slow.

What was your Saturday workout?

Short & Simple

My workout for today comes from SELF Magazine’s Drop 10 Challenge“.

For those of you who don’t know, Karena and Katrina from Tone It Up have partnered up with SELF Magazine for a 10 week challenge to lose 10 lbs for Bikini Season – which, btw, is right around the corner. The Challenge started last week.

Anyway, as I was saying… I did one of their HIIT workouts for today’s cardio sesh.

And it went a little somethin’ like this:

5 min warm up on the eliptical (any cardio of your choice)

then…

3 min walk @ 4.0 on the treadmill
60-second sprint @ 9.0
**repeated 6x for a total of 24 minutes

6 minute cool down – walked at 4.0

I had planned to do a toning circuit after dinner tonight but plans changed when, after dinner, my tummy started aching.

No biggy. I’ll just tack it on to tomorrow’s workout.

Anyway, try this cardio workout and let me know what ya’ll think.

I absolutely loved it.

A complete change up of what I’ve been doing lately.

My body totally needed it.

Went to Clarks Nutrition Store in Downtown Riverside yesterday to pick up some things and found somethin’ I’ve been searching ALL over the Inland Empire for…

Okay, maybe not ALL over the Inland Empire…maybe just in Moreno Valley.

But whatever. The point is, I found lots more varieties of this cereal brand…

….at Clarks.

I’m such a huge fan.

I didn’t get a chance to really look through the aisle for the Puffins Cinnamon – I actually thought I had grabbed it. But when I got home, I realized I had picked up the wrong one.

But guess what? This one’s yummy, too. And healthy. So it’s still a win-win, right? At least now I know where to find ’em.

Had some today. Sooooo good!

i heart weddings

If you know anything about me, you’d know how much I LOVE weddings.

I love everything about weddings.

From the venue, to the decor, to the dresses, to the entertainment…

and to the FOOD!!! Oh-em-gee I love food. 😛

I love ’em all.

If I could afford to throw myself a wedding every year, I sooo would.

I’m soooo not kidding at all.

Okay, so this past Sunday we went to a wedding. The first wedding of the year. And trust me, there’s a handful of them coming up and I am looking forward to every single one of them.

For some odd reason, I thought it was going to be on the Queen Mary, but I was wrong (and disappointed).

So yeah. For those that follow me on Twitter…sorry. I totally lied about the location.

The day started off very nice and sunny.

I was able to get some gym time in: 30 min HIIT on the treadmill, which actually put me just over a 5k.

Not bad.

Ran to Target really quick to get a last minute gift.

Hey, don’t judge. I was sick all week remember?

By the time we were all ready to go, the sky had turned an ugly shade of gray.

On the drive out there, it poured.

No sweat though. I was able to keep myself amused….

After all that nonsense, we finally made it to the venue. I got so caught up saying hello to everyone that I didn’t really get a chance to take many pictures. And the few pictures I did take…well the quality wasn’t the best.

Just know this. The wedding was simple, elegant, and very intimate.

And we had a FABULOUS time.

Congratulations to the happy couple!!!

Remember how I said I love food? Yeah, well I was really looking forward to seeing (and tasting) what was on the menu.

Cocktail hour: Full open bar. Helped myself to a margarita and some wine. Yum.

Appetizers served: bruschetta, bacon wrapped scallops, and chicken kabobs.
Wasn’t a big fan of the bacon wrapped scallops or chicken kabobs. Just my opinion.

And next up: Dinner!

All I have to say is…I should have ate more appetizers.

Dinner was steak, shrimp, mashed potatoes, and asparagus. It looked delicious.

Not gonna gross you out with the details, but let’s just say I don’t eat raw meat.

Yeah. So hubs gave me his shrimp and I just stuck to that and the veggies.

The best thing I ate all night?

I’m Back

After a week long battle with a nasty cold, I finally had a breakthrough. Woke up this morning feeling soooo much better. No more runny nose. No more fevers. No more chills and aches & pain. I still have a yucky sounding cough, but hey, I’m not complaining. My body is healing. And for that I am grateful.

So, of course, the first thing on my agenda for the day was to somehow fit some gym time in my oh-so-busy schedule. Oh who am I kidding. Today was set to be a lazy day for me, but I was thrilled to know that I was feeling well enough to do some type of physical activity. After running a few errands earlier today, I headed to the gym with the hubs and his bro. Did I plan to do some weight lifting today? No. The one thing I craved the entire time I was sick was running. And that’s exactly what I chose to do.

My ambitious self wanted to attempt to run for at least 45 minutes. Because I felt like I had to make up for lost time. But yesterday, I had a minor asthmatic episode (which, by the way, doesn’t happen very often), so I decided that I should really take it easy. My chest wasn’t congested at all today, so I wasn’t too worried. But these things are always hard to predict and I tend to get a little paranoid when I get these episodes. So taking my time easing back into my normal workout routines was really the only way to go. I did an HIIT (high intensity interval training) cardio circuit – one of Tone It Up’sShredmill” workouts…minus the plyometric exercises in between each running circuit.

Tone It Up’s Shredmill Routine

3 min brisk walk 
3 min run
60 second all-out sprint
60 second jog
60 second all-out sprint

**As a warm-up I walked at a 4.0 speed for 5 minutes, then stopped to stretch.
I repeated the circuit 3x for a total of 27 minutes, and then cooled down for 2 minutes afterwards.

I was kinda anxious about getting back into the routine. Don’t get me wrong, I was still super excited. But there was a huge part of me that was afraid that taking a week off from working out may have set me back on my progress. I mean, what if I no longer had the cardio endurance to run long distances? I worked my butt off for over 6 months to get where I am today, and would have felt defeated if I couldn’t even run for 5 minutes without stopping. Not sure if you noticed… but I’m really hard on myself at times. And it really would have put me in a funk if that happened.

But guess what. It was like I never even took a break from running. At all. I had expected to struggle at first. Thought maybe I’d be short of breath in the middle of the 1st circuit. Nope. It actually felt easy. I felt light on my feet… I felt like I could run forever. It felt good. And I realized at that moment just how much I missed running. I don’t know how to explain it…but running for me makes me feel free. Like I can do anything. It clears my mind of all negative thoughts… I’m able to think clearly… and I’m sooo relaxed (yeah, I know that sounds weird considering it can be a pretty intense workout at times). And at the end of my workout, even though my body is exhausted, I’m already looking forward to the next time I’m able to run again. Hmm. I’m definitely a runner. At least I can say that now. With confidence.

Needless to say, my workout today was awesome. It was a good way for me to jump back. I didn’t overdo it, even though I felt (almost immediately) that I should have done more. But the cough attack that ensued after the 3rd circuit told me I had enough for the day. I mean, now that I know I still got it… I’m pretty sure I’ll be doing more in my workouts this week.

Tomorrow’s Sunday Run-Day… should I do 5k? Or shoot for 10k? 😉

something to look forward to

The bridesmaids will be wearing dresses from David’s Bridal in the pink color – more specifically, watermelon.

Yeah, we’re gonna be hot. 😉

I went in to try on and order my dress last week.

It’s supposed to be in around April 6th. Will definitely be sharing pics when I get it.

Anyway, needless to say…

I’m uber excited for my sissy… she’s going to be beautiful on her special day and I am so happy she’s giving me the honor to stand beside her when she says ‘I Do’ to love of her life.

I Have To Confess

I know it’s been awhile since I’ve posted anything…

…and I have to apologize.

I haven’t been feelin’ so well the past few days.

Whatever is going around finally got to me and I’ve been feelin’ under the weather since Sunday night.

So under the weather that I’ve only been to the gym once this week.

And it’s also affected my appetite, too.

My taste buds were shot and couldn’t taste anything (still can’t) and even started craving nothing but junk food.

Yup.

I was miserable with a sore throat, a yucky cough, and a runny nose from hell.

So I turned to comfort food.

On Tuesday, my co-worker brought these to work…

Now, I don’t know if you’ve ever had these…

but they are SOOOO friggin’ GOOD.

It was full when she brought it in the morning…

by the end of my shift, I think I may have devoured HALF the box by myself.

And no I’m not exaggerating.

I probably would have had more, but one of my other co-workers hid the box from me.
That’s how bad it was.

But I thought to myself… it can’t be that bad. I’m gonna be going to the gym tonight anyway.

And really, I had planned on going to the gym.

Except, that as the day wore on…my body just got weaker and weaker.

I was miserable. My entire body just ached. And I had the chills. Pretty bad. And a fever.

So I stayed home to rest.

Yesterday, I went to work. Brought a yucky can of chicken noodle soup for my lunch.
(Yeah, it’s not the healthiest, but I haven’t been feeling up to par to make me anything healthy…)

And all I craved was a Frosty from Wendy’s.

Yes… totally gave in. Went and had a large fries plus a small chocolate Frosty.

It felt soooo good on my throat.

Oh hey! On the plus side! Being sick has made me REALLY thirsty the past couple of days and I probably drank over 120 oz of water per day.
So that’s good, right?
(That’s what I keep telling myself)

Was looking forward to having some coconut water when I got home… totally needed the electrolytes.

But hubby decided to buy me this instead.

Yeah…not the greatest tasting drink. Not that it was bad, either…

But I was sooo looking forward to coming home and downing some C2O to quench my uncontrollable thirst.

I did drink it, though… because it was loaded with lots of good stuff – lots of antioxidents.

And then for dinner, I had….

SALTINE CRACKERS!!!

A bunch of it. Because that’s all my body wanted to eat.

Being sick really makes me do some weird things.

That brings us to today.

Thank goodness I had the day off.

I was able to get some good rest in and I’m feeling a whole lot better.

I still have a terrible cough, but I think I’m over the feverish stage. So that’s good.

And although I may not be 100% yet, my healthy appetite is finally comin’ back.

This is what I had for lunch.

salmon w/celery, carrots, cucumbers, and some crab all mixed together with mustard and plain greek yogurt (instead of mayo)on a layer of baby spinach ALL on top of whole wheat sandwich thins.

I even tried to get a workout in.

When I heard my hubs and his bro were going off to do some field workouts… I felt the urge to go with so I could run on the track.

But he shot me down…told me I needed to stay home and rest some more.

He’s going back tomorrow…

And I’m hoping I’m well enough to go, too.
