I’m finally able to sit down and hash out a blog post. Almost 7pm and I’ve worked out, showered, and had dinner. And guess what. I’m ready for bed. Spent the last 30 minutes looking for a phone charger that seems to have disappeared. I think I’ve completely lost it. My mind. And my phone charger. A small part of me is hoping I left it at work…but for some odd reason… I’m totally thinkin’ I lost it in transit from work to home. Yup. Story of my life.

Okay. So what I wanted to write about tonight, before I became distracted with the whole phone charger ish, is of our trip to Knott’s Berry Farm over the weekend.



Very fun place to go. Not as big a park as Disneyland, but still very fun to visit nonetheless. And this day was all about London. My niece. Who is at that age where every thing excites her.


What I loved most about this entire day is watching her face light up when she saw the rides and the Peanuts Gang. You know, Snoopy…Patty….Woodstock. Well…Woodstock was there, but Ladybugs did not want to go near him. Just Patty. And Snoopy.


We got there in time to catch the Wild West Stunt Show. I thought it was a pretty cool show to watch. More comical than anything else.


I don’t think Ladybugs cared for it much. She was pretty eager to get on the rides. And for a 3 year old, she sure wasn’t afraid to get on the rides by herself! She even wanted to get on the adult rides. Oh she’s gonna be a blast to ride with on the big kid rides at Magic Mountain when she gets older…that is, if she’ll let us ;-).


Us big kids got on some rides, too. Most of ’em were little kid rides… but we did get to squeeze in a couple of the big kid rides. Like the Xcelerator and the Sierra Sidewinder (the only 2 names I can remember). And, of course… I have no pics to post but trust me…they were fun!!!

So it was a pretty good day. London enjoyed herself very much. It was sooo worth going on a day that could have easily been the perfect “Lazy Sunday” because we all know cool weather equals cuddle weather, right?!

What’s Been Cookin’ In My Kitchen

Yesterday I mentioned that I made some vegetable soup with turkey meatballs. In the crockpot. Ohhhh yeah. It was yummy. My guinea pig of a hubster has given his seal of approval on it. So yeah…it’s good. 

Some friends find it surprising (I have no idea why) to find I am quite the domesticated housewife. Yes I can cook. I’m not a gourmet chef by any means. But I can definitely hold my own in the kitchen. I guess you can say that I follow directions pretty well… that’s all there is to it, right? I mean, find a recipe…buy the ingredients…throw it all together…maybe tweak it a little…and bada bing bada boom! You got yourself somethin’ yummy. At least that’s what we hope for.

So back to the veggie soup with turkey meatballs. I got the original recipe from a blog site called Sweet Tooth Sweet LifeAbsolutely LOVE this blog. Blogger Courtney Horan writes about food, fashion, and fitness. She’s got lots of healthy yummy recipes on there as well as workout routines.

This is the original recipe:



  • 1 pound lean ground beef (I used 93%)
  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • 1/3 teaspoon pepper
  • 3 cups water
  • 4 medium red potatoes, cut into 3/4 inch chunks
  • 1 can (14.5 oz) Italian style diced tomatoes, undrained
  • 1 can (11.5 oz) low-sodium V8 juice
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 tablespoons sugar
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons dried basil
  • 1 bay leaf


In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in salt and pepper. Transfer to slow cooker and add remaining ingredients. Cover and cook on low for 9-11 hours or until vegetables are tender. Discard bay leaf before serving. Enjoy!

Instead of using lean ground beef, I used ground turkey instead. Made homemade turkey meatballs. And yes, I also got that recipe from someone I follow on Instagram.

Anyway, what’s in it?



I couldn’t tell ya the exact measurements of each ingredient, but they’re all healthy stuff, so I just guess-timated. And they turned out to be YUMMY.

I cooked the meatballs first and then threw everything into the crockpot for about 5 hours. It was enough to feed the hubs and I for lunch for 2 days. Not bad. Of course, he eats more than I do…so if he hadn’t had any, I’m sure that batch would have lasted me all week.   And that’s too long for me to be eating the same stuff day after day. Thank goodness for husbands (my own human garbage disposal ;-))

Wednesday Workout

So…. no time for chit chat. I just wanted to post up the workout I did today. Had a pretty busy day at work… nothing exciting happened to me today (shocker!) but it was a pretty packed day. After work, did a HIIT cardio workout on the treadmill at the gym. Came home and did 2 Tone It Up Workouts from their Love Your Body Challenge. Had a pretty colorful salad for dinner. And now I’m ready for bed. Did I mention it’s only 8:45pm? Seriously… can you say ‘old lady status’?

Anyway…I’m falling asleep as I’m typing this… but here are the workouts…

HIIT (High Intensity Interval Training) Cardio

1 min sprint (as fast as you can)
2 min walk (at about 4.0)

*repeated 8 times*

(FYI I warmed up for 10 minutes prior to this and then ended with a 6 minute cooldown)

Last week I made black bean soup on the crock pot…this week I made  turkey meatball vegetable soup. Will be posting up pics and recipes soon, I promise!!! 😉

Week 3 Recap

So today I completed our Valentine’s Day setup at work. The last piece of it anyway… it took a week to get it all done. And like, Christmas, I kept hearing “Valentine’s Day already?” Yup. Less than a month away. Is it just me or is time really just whizzing by like that? And then I just realized… we’re 3 weeks into the new year and I’ve already found myself “too busy” to give ya’ll an update. Not that I’m some big shot celebrity livin’ an exciting life or anything like that. 😉

I think I could squeeze my week into one post without it sounding too boring. Okay, here goes.


Worked 2 hours in the morning (730a-930a) to take down my store’s sale.

Went to the gym immediately afterwards for a 45 min HIIT cardio sesh.

Came home, watched some football (an awesome one, I might add) with the hubs
and then jetted to the mall to pick up some things.

What I ate that day – can’t really remember… I’m sure it started off healthy…
but then we had lunch at the mall (some grilled sub place) and then
went to see Zero Dark Thirty that night. And you know me…
I had to have movie popcorn.


Worked a 5 hour shift.

Then 45 min cardio sesh at the gym.

What I ate that day – again, not exactly sure…but it was an 80% clean kinda diet day.
Hey, don’t judge. I did eat a lean & clean dinner though.

I also made a mean Black Bean Soup that day, which I ate for either lunch or dinner
the next couple of days after. I’ll be writing up a post about that one.
Because it was DELICIOUS!!!



Worked my regular shift 700a-330p.

And it was Leg Day today. Worked out at home. Did the same workout from last week.
You know…the one that left me in pain for like a week? Yeah that one.
The hubs incorporated some plyos to the mix.

What I ate that day: 90% clean. 5 well balanced meals.
Was all set to make a chicken salad for dinner but my sister in law wanted
to get some pho for dinner and I caved in and went with her.


Worked my regular shift.

45 min cardio sesh at the gym – legs felt like they weighed a ton.
Yup, it was one of those days…but I got through it!!!

What I ate that day: 100% clean. (Thank goodness!!!)


BUSY work day. Worked 615a-315p. Went with my boss to one of our new stores opening
up in Victor Valley (for the first part of my day). We had to take down the old “coming soon” vinyl
and put up the new “grand opening” vinyl and the “employment center” sign.



What I ate that day: 50% clean. Clean breakfast. Clean Dinner.
On our way back to our store, my boss treated  me to some Starbucks.
I had a grande (should have gotten a tall) Cinnamon Dolce Latte.
Lunch? Semi-clean. The Merchandising Manager from my store treated the
entire Support Staff to lunch. Olive Garden. I ordered the soup, salad & breadstick
off the menu. What got me was their yummy breadsticks and a couple of
stuffed mushrooms and spinach & artichoke dip (not together, of course).

Came home and worked out with the hubs. We did upper body.
Bench press, push-ups, jerks, and ring pull-ups.


Worked my regular shift.

The plan was to come home and workout with the hubs. And then go to the gym for some cardio.
What really happened? Well, I had one of them “creeper” headaches
sneak up on me today. And I’m sore from last night’s workout.
So I took today off. Sue me.

I am just looking forward to having a 2-day weekend again. It’s been awhile. I plan to sleep in tomorrow. Sleeping in for me is till about 9-ish. Then I plan on eatin’ somethin’ and get to the gym for some much needed cardio. Because, the not-so-clean eating habits has caused some major bloat-age. I think I’m also “scheduled” to do some more weight lifting with the hubs. And then… Sunday is all about football, baby! Woohoo!!! Go Niners!!! 😉 Haha.

Torture + My Body = No Bueno

My coworker said to me the other day, “How do you workout every day and not be sore?” I laughed as she went on to tell me that she’s determined to stick to her New Year’s Resolution (which she started a couple of days before the New Year) of working out every other day. My response to her comment? “Oh believe me, I get sore. But it’s become so much a part of my every day that I have no choice but to ignore that pain.”

The truth is, the really “painful” days come after lifting super heavy weight. Or trying a brand new workout that tend to target muscle groups I haven’t worked out in awhile. The other days, there’s still some pain…but more muscle tightness and just a little discomfort. This low intense pain (if that makes any sense) come on days where I do HIIT cardio and/or low weight toning circuits.

Okay. So I did not workout today. I willed myself to do it. I tried to mentally prepare for it. I even argued with my personal trainer (aka my hubs) just so I could get out of it. My body is just too dang sore to do any kind of workout. Yes… today was a “painful” day.

This pretty much sums it up…


When I woke up this morning, I thought to myself “okay, I feel pain…but no big deal.” Then, of course, as the day went on, the level of soreness increased. I had to climb up onto the cosmetic/fragrance ledges at work today and that took a lot longer than normal. Last night, I did a workout designed by my personal trainer (who, by the way, I’m seriously thinking about maybe firing). I did 3 exercises. Yup just 3. Leg exercises. That worked out my entire body. My arms, my shoulders and my abs are SORE. With every breath, every movement, every sneeze or cough…everything just hurts. 

And so now, I’m just sittin’ here… feelin’ like I got hit by a bus. Wishing for a full body massage…and then wishing NOT to have one because the mere thought of someone touching my muscles makes it more painful. Yes…it hurts when I barely touch my thigh. And as much as it sucks to be in this much pain… I love knowing that it was a great workout and I made it through. And I will definitely go at it hard for tomorrow’s workout.

Last night’s workout:
3 sets, 12 reps each

135 lb. squats w/barbell
65 lb. alternative front lunges
100 lb. deadlifts

Tonight’s planned workout:

sprints – 12 times, full recovery in between each sprint

**postponed for another day

My trainer has another good strength training workout planned for tomorrow. Lookin’ forward to it. Kind of. 😛

Veggie Soup With Some YouTube Please…

This is going to be a completely random blog. Short. And oh so very random. I was really planning on spending a bit more time blogging tonight since I had just a teensy bit more time this evening than I’ve had all week…but I was distracted. Sat down to have some dinner (vegetable soup, some chicken, and some okra – don’t ask, just go with it). With the laptop just chillin’ on the dining table, I thought to myself “oh why not, let’s see what’s on youtube.” If you are thinkin’ “OMG this chick is totally random,” YOU ARE TOTALLY RIGHT!!! 

I wasn’t lookin’ for any video in particular to watch. But what popped up, because it was logged into my husband’s account (shhh don’t tell him ;-)), were a bunch of fitness and weight lifting videos. I clicked on one. Don’t remember the exact one. And then a bunch of “recommended” videos popped up on the side. The one that caught my eye were videos starring Amanda Latona. For those of you who don’t know (which I’m sure not many do unless you are fitness geeks), she used to be a pop singer and dancer back in the day. You know…when Backstreet Boys and NSYNC ruled the airwaves and music video channels on TV. She actually danced in a couple of their videos and dated BSB member AJ McLean and was in a girl group called Innosense, a group founded by Lou Pearlman (who also managed both BSB and NSYNC). Don’t ask me how I know all this… I just do.

Ok, so anyway… what started off as “just browsing” for something to watch while I ate my dinner turned into an “I’m hooked on Amanda Latona Fitness Vids” sorta marathon. After her stint with Innosense, she became this fitness athlete slash bikini/fitness competitor and is well known in the fitness world. And she’s been doin’ a fitness video series called Amanda Latona – Turning HeadsI think I watched like 10 of her videos. They’re short videos. Talks about specific workouts that help target different muscle groups – which I plan to do and has given me ideas on how to change up my workout routines. Many of the workouts she does in these videos I’ve done before (especially when the hubby trains me)… but because I plan to do a lot more weight training  now, these videos were a great refresher for me.

Can you say girl crush? Yup. Most definitely.


So there ya go. Dinner was over hours ago (I’m exaggerating, but it sure feels that way) and now I have to prep for tomorrow and get my booty to bed! Have a good night!

Love Your Body

So I’m on Day 3 of Tone It Up’s Love Your Body Challenge. And so far, so good. Meals and workout routines have been on point.

Now I’m workin’ on the rest of their challenges they posted on their blog for Day 1 and Day 2.

As part of this challenge, Tone It Up trainers Karena and Katrina asks us to write down 5 things we love about ourselves. As easy as the assignment seems, this is something I really find myself struggling with on a daily basis. They talk about how we need to stop being critical of ourselves and others. Because we are all beautiful inside and out, and we need to stop putting ourselves down. That negative energy, believe it or not, hinders our ability to achieve goals. Law of attraction. This I know. I practice it when I’m looking for job opportunities or when I have to study for a difficult test. But never when I’m referring to the way I look. There have been a few times where I’ve said out loud “I’m fat.” And my husband has said to me “you’re not. But if you keep thinking that way, you will be.”So I’m actually glad that K&K encourage us to do these kinds of exercises, because really, this is not just a physical challenge… it’s also a mental challenge. To help us stay motivated. To help keep us stay in check. To help us become better people and to feel good about ourselves.

Anyway, after a lot of thought this is what I came up with:


I am my worst critic. And I find myself paying way too much attention to my “problem” areas that I don’t recognize the goods.
